Executive chef Stefan Schmidt is not only passionate about his cooking but also about the environment and sustainability. He heads up the green team at the hotel and has initiated and encouraged Meatless Mondays and organic inspired menus on Thursdays. Please enjoy the first of his recipes that kicks off with Earth Hour. This dish will be served as a starter at the candlelight dinner in Trees restaurant on the 31st March.
